Codfish Fritters (Buñuelos de Bacalao)
Buñuelos de Bacalao, or Codfish Fritters, are a traditional dish from Aragonese cuisine. These crispy fritters are made with salted codfish, flour, and a variety of seasonings, making them a popular appetizer or snack in the region.
Ingredients
- 1 lb salted codfish, soaked and flaked
- 1 cup all-purpose flour
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1 tsp baking powder
- 1/2 tsp paprika
- 1/4 tsp black pepper
- 2 eggs
- 1/2 cup milk
- Vegetable oil for frying
Instructions
- In a large bowl, combine the flaked codfish, flour, onion, garlic, parsley, baking powder, paprika, and black pepper.
- In a separate bowl, whisk together the eggs and milk. Pour the egg mixture into the codfish mixture and stir until well combined.
- Heat vegetable oil in a deep skillet over medium heat. Drop spoonfuls of the codfish batter into the hot oil and fry until golden brown, about 3-4 minutes per side.
- Remove the fritters from the oil and drain on paper towels. Serve hot.
