Ingredients

  • 1 pound salted codfish, soaked and flaked

  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix the flaked codfish, chopped onion, and parsley.
  2. In a separate bowl, beat the eggs and then add them to the codfish mixture.
  3. Sift the flour and baking powder into the bowl and mix until well combined.
  4. Season the mixture with salt and pepper to taste.
  5. Heat the vegetable oil in a large skillet over medium heat.
  6. Spoon the codfish mixture into the hot oil, forming small fritters, and fry until golden brown on both sides.
  7. Remove the fritters from the oil and place them on a paper towel to drain any excess oil.
