Ingredients
- 4 medium beets, cooked, peeled, and grated
- 2 cucumbers, peeled and diced
- 3 hard-boiled eggs, chopped
- 4 green onions, thinly sliced
- 1/4 cup fresh dill, chopped
- 4 cups kefir or buttermilk
- 1 cup sour cream
- Salt and pepper to taste
Instructions
- In a large bowl, combine the grated beets, diced cucumbers, chopped eggs, and sliced green onions.
- Add the chopped dill and mix well.
- In a separate bowl, whisk together the kefir or buttermilk and sour cream until smooth.
