Cold Cucumber Soup (bulgarian Bonanza: Tarator)
Tarator is a traditional Bulgarian cold cucumber soup that is perfect for hot summer days. It's refreshing, light, and packed with flavors.
Ingredients
- 2 large cucumbers, peeled and grated
- 2 cups plain yogurt
- 2-3 garlic cloves, minced
- 2 tbsp olive oil
- 1 tbsp white wine vinegar
- Salt and pepper to taste
- 4-5 fresh dill sprigs, chopped
- 1/2 cup walnuts, chopped (optional for garnish)
Instructions
- In a large bowl, combine the grated cucumbers, yogurt, minced garlic, olive oil, and white wine vinegar.
- Season with salt and pepper, and mix well.
- Chill the soup in the refrigerator for at least 1 hour before serving.
- Before serving, stir in the chopped dill.
- Divide the soup into bowls and garnish with chopped walnuts if desired.
