Cold Cucumber Soup (bulgarian Bonanza: Tarator)

Ingredients

  • 2 large cucumbers, peeled and grated
  • 2 cups plain yogurt
  • 2-3 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 tbsp white wine vinegar
  • Salt and pepper to taste
  • 4-5 fresh dill sprigs, chopped
  • 1/2 cup walnuts, chopped (optional for garnish)

Instructions

  1. In a large bowl, combine the grated cucumbers, yogurt, minced garlic, olive oil, and white wine vinegar.
  2. Season with salt and pepper, and mix well.
  3. Chill the soup in the refrigerator for at least 1 hour before serving.
  4. Before serving, stir in the chopped dill.
  5. Divide the soup into bowls and garnish with chopped walnuts if desired.
