Ingredients

  • 2 lbs chicken thighs, cut into pieces
  • 2 tbsp Colombo spice mix
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 can coconut milk
  • 2 tbsp vegetable oil
  • 2 cups chicken broth
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions

  1. In a large bowl, season the chicken pieces with the Colombo spice mix, salt, and pepper. Let it marinate for 15 minutes.
  2. In a large pot, heat the vegetable oil over medium heat. Add the marinated chicken pieces and cook until browned on all sides. Remove the chicken from the pot and set aside.
  3. In the same pot, add the chopped onion, minced garlic, and sliced red bell pepper. Sauté until the vegetables are softened.
  4. Pour in the coconut milk and chicken broth. Stir to combine, then add the browned chicken back into the pot.
  5. Simmer the Colombo de Poulet for 30 minutes, or until the chicken is cooked through and the sauce has thickened.
  6. Stir in the lime juice and adjust the seasoning with salt and pepper to taste.
  7. Serve the Colombo de Poulet hot with steamed rice or crusty bread.
