Colombo De Poulet (coconut Curry Chicken)

Ingredients
- 2 lbs chicken thighs, cut into pieces
- 2 tbsp Colombo spice mix
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 red bell pepper, sliced
- 1 can coconut milk
- 2 tbsp vegetable oil
- 2 cups chicken broth
- 1 lime, juiced
- Salt and pepper to taste
Instructions
- In a large bowl, season the chicken pieces with the Colombo spice mix, salt, and pepper. Let it marinate for 15 minutes.
- In a large pot, heat the vegetable oil over medium heat. Add the marinated chicken pieces and cook until browned on all sides. Remove the chicken from the pot and set aside.
- In the same pot, add the chopped onion, minced garlic, and sliced red bell pepper. Sauté until the vegetables are softened.
- Pour in the coconut milk and chicken broth. Stir to combine, then add the browned chicken back into the pot.
- Simmer the Colombo de Poulet for 30 minutes, or until the chicken is cooked through and the sauce has thickened.
- Stir in the lime juice and adjust the seasoning with salt and pepper to taste.
- Serve the Colombo de Poulet hot with steamed rice or crusty bread.
