Combination Rice

Ingredients

  • 1 cup white rice
  • 1 cup quinoa
  • 1 cup diced bell peppers
  • 1 cup frozen peas
  • 1/2 cup diced carrots
  • 1/2 cup corn kernels
  • 1/4 cup soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon sesame oil
  • 4 cups vegetable broth

Instructions

  1. Rinse the white rice and quinoa under cold water, then drain.
  2. In a large pot, heat the sesame oil over medium heat. Add the minced garlic and sauté for 1 minute.
  3. Add the diced bell peppers, peas, carrots, and corn to the pot. Cook for 5 minutes, stirring occasionally.
  4. Stir in the rice, quinoa, and soy sauce. Cook for 2 minutes to toast the grains.
  5. Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for 20 minutes or until the liquid is absorbed and the grains are tender.
  6. Fluff the combination rice with a fork and serve hot.
