Commander's Clam Bake

Ingredients

  • 2 lbs fresh clams
  • 1 lb baby potatoes
  • 4 ears of corn, husked and halved
  • 1 lb smoked sausage, sliced
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 1/4 cup butter, melted
  • 1/4 cup chopped fresh parsley
  • 1 lemon, sliced
  • Salt and pepper to taste

Instructions

  1. Scrub the clams under cold water and place them in a large bowl of cold water to soak for 20 minutes.
  2. In a large pot, bring water to a boil and add the potatoes. Cook for 10 minutes.
  3. Add the corn, sausage, onion, and garlic to the pot with the potatoes and continue to boil for 5 minutes.
  4. Drain the clams and add them to the pot. Cover and cook for 10-12 minutes, or until the clams have opened.
  5. Drain the contents of the pot and transfer to a large serving platter.
  6. Drizzle the melted butter over the clams, potatoes, corn, and sausage. Sprinkle with chopped parsley and arrange the lemon slices on top.
  7. Season with salt and pepper to taste.
