Conch Fritter Sliders (Slider Bala-Bala Konk)

Ingredients

  • 1 lb conch, finely chopped
  • 1 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1 small onion, finely chopped
  • 1 bell pepper, finely chopped
  • 2 garlic cloves, minced
  • 1 scotch bonnet pepper, finely chopped
  • 1/2 cup milk
  • 2 eggs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Oil for frying
  • 8 slider buns
  • Lettuce and tomato for garnish

Instructions

  1. In a large bowl, combine the chopped conch, flour, cornmeal, onion, bell pepper, garlic, and scotch bonnet pepper.
  2. In a separate bowl, whisk together the milk, eggs, salt, and black pepper.
  3. Pour the wet mixture into the conch mixture and stir until well combined.
  4. Heat oil in a large skillet over medium heat.
  5. Scoop spoonfuls of the conch mixture and carefully drop them into the hot oil.
  6. Fry the conch fritters until golden brown and crispy, about 3-4 minutes per side.
  7. Remove the fritters from the oil and drain on paper towels.
  8. Assemble the sliders by placing a conch fritter on each bun, garnish with lettuce and tomato, and serve hot.
