Conch Fritters With Lime Aioli

Ingredients

  • 1 lb fresh conch meat, finely chopped
  • 1 cup all-purpose flour
  • 1 small onion, finely diced
  • 1 bell pepper, finely diced
  • 2 cloves garlic, minced
  • 2 green onions, finely sliced
  • 1 tsp baking powder
  • 1/2 tsp cayenne pepper
  • 1/2 tsp paprika
  • 1/2 cup milk
  • 2 eggs, beaten
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  1. In a large bowl, combine the conch meat, flour, onion, bell pepper, garlic, green onions, baking powder, cayenne pepper, paprika, milk, and eggs. Season with salt and pepper. Mix until well combined.
  2. Heat vegetable oil in a deep pot or skillet over medium heat.
  3. Drop spoonfuls of the conch batter into the hot oil and fry until golden brown, about 3-4 minutes per side.
  4. Remove the fritters from the oil and drain on paper towels.
  5. Serve the conch fritters hot with lime aioli for dipping.
