Ingredients
- 1 lb fresh conch meat, finely chopped
- 1 cup all-purpose flour
- 1/2 cup cornmeal
- 1 small onion, finely chopped
- 1 bell pepper, finely chopped
- 2 cloves garlic, minced
- 2 green onions, finely chopped
- 1/2 tsp cayenne pepper
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup milk
- 2 eggs, beaten
- Vegetable oil for frying
Instructions
- In a large bowl, combine the conch meat, flour, cornmeal, onion, bell pepper, garlic, green onions, cayenne pepper, paprika, salt, and black pepper.
- In a separate bowl, whisk together the milk and eggs. Pour the wet ingredients into the conch mixture and stir until well combined.
- Heat vegetable oil in a deep skillet over medium-high heat. Drop spoonfuls of the conch batter into the hot oil and fry until golden brown, about 3-4 minutes per side.
- Remove the fritters from the oil and drain on paper towels. Serve hot with spicy lime aioli.
