Ingredients
- 1 lb conch meat, finely chopped
- 1 cup all-purpose flour
- 1/2 cup bell pepper, finely diced
- 1/2 cup onion, finely diced
- 2 cloves garlic, minced
- 2 green onions, finely chopped
- 1 tsp thyme, chopped
- 1/2 tsp hot sauce
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup milk
- 2 eggs, beaten
- Vegetable oil for frying
Instructions
- In a large bowl, combine the conch meat, flour, bell pepper, onion, garlic, green onions, thyme, hot sauce, salt, and black pepper. Mix well.
- In a separate bowl, whisk together the milk and eggs. Pour the milk mixture into the conch mixture and stir until well combined.
- Heat vegetable oil in a deep pot to 350°F (175°C).
- Drop spoonfuls of the conch mixture into the hot oil and fry until golden brown, about 3-4 minutes per batch.
- Remove the fritters from the oil and drain on paper towels.
- Serve the conch fritters hot with spicy remoulade sauce.
