Conch Fritters With Spicy Remoulade Sauce

Ingredients

  • 1 lb conch meat, finely chopped
  • 1 cup all-purpose flour
  • 1/2 cup bell pepper, finely diced
  • 1/2 cup onion, finely diced
  • 2 cloves garlic, minced
  • 2 green onions, finely chopped
  • 1 tsp thyme, chopped
  • 1/2 tsp hot sauce
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup milk
  • 2 eggs, beaten
  • Vegetable oil for frying

Instructions

  1. In a large bowl, combine the conch meat, flour, bell pepper, onion, garlic, green onions, thyme, hot sauce, salt, and black pepper. Mix well.
  2. In a separate bowl, whisk together the milk and eggs. Pour the milk mixture into the conch mixture and stir until well combined.
  3. Heat vegetable oil in a deep pot to 350°F (175°C).
  4. Drop spoonfuls of the conch mixture into the hot oil and fry until golden brown, about 3-4 minutes per batch.
  5. Remove the fritters from the oil and drain on paper towels.
  6. Serve the conch fritters hot with spicy remoulade sauce.
