Ingredients
- 4 large cucumbers
- 1 cup cooked rice
- 1 cup cooked black beans
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 teaspoon thyme
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1/4 cup chopped parsley
Instructions
- Using a vegetable peeler, peel strips of skin from the cucumbers, leaving alternating strips of skin to create a striped pattern. Cut the cucumbers in half lengthwise and scoop out the seeds to create a hollow cavity. Set aside.
- In a large bowl, mix together the cooked rice, black beans, onion, garlic, thyme, paprika, salt, black pepper, and olive oil. Stir in the chopped parsley until well combined.
- Stuff the hollowed-out cucumbers with the rice and bean mixture, pressing the filling down gently to pack it in.
- Heat a large skillet over medium heat and add a drizzle of olive oil. Place the stuffed cucumbers in the skillet, stuffed side down, and cook for 5 minutes until the bottoms are golden brown.
- Carefully flip the cucumbers over and cook for an additional 5 minutes until the other side is golden brown and the cucumbers are tender.
- Remove from the skillet and let cool for a few minutes before serving.
