Concord Cornbread Casserole

Ingredients
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/4 cup vegetable oil
- 1 egg
- 1 pound ground beef
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 can (14.5 oz) diced tomatoes
- 1 cup frozen corn
- 1 cup shredded cheddar cheese
Instructions
- In a large bowl, combine the cornmeal, flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together the milk, vegetable oil, and egg. Pour the wet ingredients into the dry ingredients and stir until just combined.
- Preheat the oven to 375°F (190°C).
- In a skillet, cook the ground beef, onion, and bell pepper over medium heat until the beef is browned and the vegetables are tender. Drain any excess grease.
- Stir in the diced tomatoes and frozen corn. Cook for an additional 5 minutes.
- Spread half of the cornbread batter into the bottom of a greased 9x13 inch baking dish.
- Spread the beef and vegetable mixture over the cornbread batter.
- Sprinkle the shredded cheddar cheese on top of the beef mixture.
- Drop the remaining cornbread batter by spoonfuls over the cheese layer.
- Bake for 30-35 minutes, or until the cornbread is golden brown and a toothpick inserted into the center comes out clean.
- Let the casserole cool for 5 minutes before serving.
