Concord Cornbread Casserole

Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 pound ground beef
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup frozen corn
  • 1 cup shredded cheddar cheese

Instructions

  1. In a large bowl, combine the cornmeal, flour, sugar, baking powder, and salt.
  2. In a separate bowl, whisk together the milk, vegetable oil, and egg. Pour the wet ingredients into the dry ingredients and stir until just combined.
  3. Preheat the oven to 375°F (190°C).
  4. In a skillet, cook the ground beef, onion, and bell pepper over medium heat until the beef is browned and the vegetables are tender. Drain any excess grease.
  5. Stir in the diced tomatoes and frozen corn. Cook for an additional 5 minutes.
  6. Spread half of the cornbread batter into the bottom of a greased 9x13 inch baking dish.
  7. Spread the beef and vegetable mixture over the cornbread batter.
  8. Sprinkle the shredded cheddar cheese on top of the beef mixture.
  9. Drop the remaining cornbread batter by spoonfuls over the cheese layer.
  10. Bake for 30-35 minutes, or until the cornbread is golden brown and a toothpick inserted into the center comes out clean.
  11. Let the casserole cool for 5 minutes before serving.
