Cong Bai Niu Rou (stir-fried Beef With Scallions)

Ingredients

  • 1 lb (450g) beef sirloin, thinly sliced
  • 3-4 scallions, cut into 2-inch pieces
  • 2 tablespoons soy sauce
  • 1 tablespoon Shaoxing wine
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • 1/2 teaspoon cornstarch
  • 1/4 cup vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, marinate the beef slices with soy sauce, Shaoxing wine, oyster sauce, sugar, and cornstarch for 15 minutes.
  2. Heat the vegetable oil in a wok or skillet over high heat. Add the beef slices and stir-fry for 2-3 minutes until browned. Remove the beef from the wok and set aside.
  3. Add the scallions to the wok and stir-fry for 1-2 minutes until fragrant.
  4. Return the beef to the wok, season with salt and pepper, and stir-fry for another minute.
  5. Transfer to a serving dish and serve hot with steamed rice.
