Conwy Castle Clam Chowder
Conwy Castle Clam Chowder is a traditional Welsh dish that is hearty, flavorful, and perfect for a cozy meal on a chilly day.
Ingredients
- 2 pounds fresh clams, scrubbed
- 4 slices bacon, chopped
- 1 onion, diced
- 2 stalks celery, diced
- 3 potatoes, peeled and diced
- 2 cups fish or vegetable stock
- 1 cup heavy cream
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- In a large pot, steam the clams in 1 cup of water until they open. Discard any unopened clams and strain the liquid. Chop the clam meat and set aside.
- In the same pot, cook the bacon until crispy. Add the onion and celery, and sauté until softened.
- Add the diced potatoes and reserved clam liquid, then pour in the stock. Simmer until the potatoes are tender.
- Stir in the chopped clams and cream. Season with salt and pepper to taste.
- Simmer for a few more minutes until heated through. Serve hot, garnished with chopped fresh parsley.
