Conwy Castle Clam Chowder

Ingredients

  • 2 pounds fresh clams, scrubbed
  • 4 slices bacon, chopped
  • 1 onion, diced
  • 2 stalks celery, diced
  • 3 potatoes, peeled and diced
  • 2 cups fish or vegetable stock
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. In a large pot, steam the clams in 1 cup of water until they open. Discard any unopened clams and strain the liquid. Chop the clam meat and set aside.
  2. In the same pot, cook the bacon until crispy. Add the onion and celery, and sauté until softened.
  3. Add the diced potatoes and reserved clam liquid, then pour in the stock. Simmer until the potatoes are tender.
  4. Stir in the chopped clams and cream. Season with salt and pepper to taste.
  5. Simmer for a few more minutes until heated through. Serve hot, garnished with chopped fresh parsley.
