Cook-up Rice Carnival
Cook-up Rice is a popular one-pot dish in Guyanese cuisine, often enjoyed during festive occasions such as Carnival. This flavorful and hearty dish is a staple in many Guyanese households and is perfect for feeding a crowd.
Ingredients
- 1 cup rice
- 1 can red beans, drained and rinsed
- 1 lb chicken, cut into pieces
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 2 tomatoes, chopped
- 1 cup coconut milk
- 2 cups chicken broth
- 1 tsp thyme
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- In a large pot, brown the chicken pieces over medium heat.
- Add the chopped onion, garlic, and bell pepper. Cook until the vegetables are softened.
- Stir in the rice, red beans, tomatoes, coconut milk, chicken broth, thyme, paprika, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 30-40 minutes, or until the rice is cooked and the liquid is absorbed.
- Fluff the rice with a fork and serve hot.
