Cook-up Rice Carnival

Ingredients

  • 1 cup rice
  • 1 can red beans, drained and rinsed
  • 1 lb chicken, cut into pieces
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 tomatoes, chopped
  • 1 cup coconut milk
  • 2 cups chicken broth
  • 1 tsp thyme
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the chicken pieces over medium heat.
  2. Add the chopped onion, garlic, and bell pepper. Cook until the vegetables are softened.
  3. Stir in the rice, red beans, tomatoes, coconut milk, chicken broth, thyme, paprika, salt, and pepper.
  4. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 30-40 minutes, or until the rice is cooked and the liquid is absorbed.
  5. Fluff the rice with a fork and serve hot.
