Coral Reef Ceviche

Ingredients

  • 1 lb fresh white fish fillets, diced
  • 1 cup lime juice
  • 1 red onion, finely chopped
  • 1 red bell pepper, diced
  • 1 jalapeno pepper, seeded and minced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. In a glass bowl, combine the diced fish and lime juice. Make sure the fish is completely submerged in the lime juice. Cover and refrigerate for 15-20 minutes, or until the fish is opaque and "cooked" by the acidity of the lime juice.
  2. Once the fish is "cooked," drain off the excess lime juice.
  3. Add the red onion, red bell pepper, jalapeno pepper, cherry tomatoes, and cilantro to the fish. Gently toss to combine.
  4. Season with salt and pepper to taste.
  5. Refrigerate for at least 30 minutes before serving to allow the flavors to meld together.
