Coral Reef Ceviche
Coral Reef Ceviche is a refreshing and flavorful dish that originates from the Devonian cuisine, known for its abundance of seafood and unique flavors.
Ingredients
- 1 lb fresh white fish fillets, diced
- 1 cup lime juice
- 1 red onion, finely chopped
- 1 red bell pepper, diced
- 1 jalapeno pepper, seeded and minced
- 1 cup cherry tomatoes, halved
- 1/4 cup cilantro, chopped
- Salt and pepper to taste
Instructions
- In a glass bowl, combine the diced fish and lime juice. Make sure the fish is completely submerged in the lime juice. Cover and refrigerate for 15-20 minutes, or until the fish is opaque and "cooked" by the acidity of the lime juice.
- Once the fish is "cooked," drain off the excess lime juice.
- Add the red onion, red bell pepper, jalapeno pepper, cherry tomatoes, and cilantro to the fish. Gently toss to combine.
- Season with salt and pepper to taste.
- Refrigerate for at least 30 minutes before serving to allow the flavors to meld together.
