Corn and Cheese Arepas (Arepas de Maíz y Queso)
Arepas de Maíz y Queso, or Corn and Cheese Arepas, are a popular dish in Nicaraguan cuisine. These delicious corn cakes are filled with gooey cheese and are perfect for breakfast, lunch, or dinner.
Ingredients
- 2 cups pre-cooked cornmeal
- 2 1/2 cups water
- 1/2 teaspoon salt
- 1 cup shredded mozzarella cheese
- 1 tablespoon vegetable oil
Instructions
- In a bowl, mix the pre-cooked cornmeal, water, and salt until a dough forms.
- Divide the dough into 8 equal portions and shape them into discs.
- Place a spoonful of shredded mozzarella cheese in the center of 4 discs, then top each with another disc and press the edges to seal.
- Heat the vegetable oil in a skillet over medium heat.
- Cook the arepas for 5-7 minutes on each side, until golden brown and the cheese is melted.
- Remove from the skillet and let them cool for a few minutes before serving.
