Corn Chicha (chicha De Maíz)

Ingredients

  • 6 ears of fresh corn, husks and silks removed
  • 1 cup of sugar
  • 1 teaspoon of cinnamon
  • 1 teaspoon of vanilla extract
  • Water

Instructions

  1. Grate the corn kernels off the cobs into a large bowl.
  2. Place the grated corn in a large pot and add enough water to cover it.
  3. Bring the mixture to a boil, then reduce the heat and simmer for 1 hour, stirring occasionally.
  4. Strain the mixture through a fine-mesh sieve, pressing on the solids to extract as much liquid as possible.
  5. Return the liquid to the pot and add the sugar, cinnamon, and vanilla extract.
  6. Bring the mixture back to a simmer and cook for an additional 30 minutes, stirring occasionally.
  7. Remove from heat and let it cool to room temperature.
  8. Transfer the chicha to a large pitcher and refrigerate until chilled.
  9. Serve the corn chicha over ice and enjoy!
