Ingredients
- 6 ears of corn, kernels removed
- 1 onion, diced
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 potatoes, diced
- 1 scotch bonnet pepper, whole
- 6 cups vegetable broth
- 1 cup coconut milk
- 1 tsp ground cumin
- 1 tsp ground turmeric
- 1 tsp dried thyme
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- In a large pot, sauté the onion and garlic until fragrant.
- Add the carrots, potatoes, and corn kernels, and cook for 5 minutes.
- Pour in the vegetable broth and coconut milk. Add the scotch bonnet pepper, cumin, turmeric, thyme, salt, and pepper.
- Simmer for 30 minutes, or until the vegetables are tender.
- Remove the scotch bonnet pepper and discard.
- Serve the soup hot, garnished with chopped cilantro.
