Ingredients

  • 6 ears of corn, kernels removed

  • 1 scotch bonnet pepper, whole
  • 6 cups vegetable broth
  • 1 cup coconut milk
  • 1 tsp ground cumin
  • 1 tsp ground turmeric
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. In a large pot, sauté the onion and garlic until fragrant.
  2. Add the carrots, potatoes, and corn kernels, and cook for 5 minutes.
  3. Pour in the vegetable broth and coconut milk. Add the scotch bonnet pepper, cumin, turmeric, thyme, salt, and pepper.
