Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1 can (14.75 oz) cream-style corn
  • 1 can (4 oz) diced green chilies
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup melted butter

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9x13 inch baking dish.
  2. In a large bowl, mix the cornmeal, flour, sugar, baking powder, and salt.
  3. Stir in the milk, vegetable oil, cream-style corn, and green chilies until well combined.
  4. Pour half of the batter into the prepared baking dish.
  5. Sprinkle half of the cheddar cheese over the batter.
  6. Spread the sour cream over the cheese layer.
  7. Pour the remaining batter over the sour cream layer.
  8. Top with the remaining cheddar cheese and drizzle the melted butter over the top.
  9. Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  10. Let it cool for a few minutes before serving.
