Ingredients

  • 2 cups cornmeal

  • 1/4 cup butter, melted

Instructions

  1. In a large bowl, mix the cornmeal, flour, sugar, baking powder, and salt.
  2. In a separate bowl, beat the eggs, then stir in the milk and melted butter.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined.
  4. Preheat a non-stick pan over medium heat and lightly grease it with butter or oil.
  5. Pour the batter into the pan and cook for 20-25 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
  6. Remove from the pan and let it cool for a few minutes before slicing and serving.
