Ingredients
- 2 cups cornmeal
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- 2 eggs
- 1 1/2 cups milk
- 1/4 cup butter, melted
Instructions
- In a large bowl, mix the cornmeal, flour, sugar, baking powder, and salt.
- In a separate bowl, beat the eggs, then stir in the milk and melted butter.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Preheat a non-stick pan over medium heat and lightly grease it with butter or oil.
- Pour the batter into the pan and cook for 20-25 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
- Remove from the pan and let it cool for a few minutes before slicing and serving.
