Cornish Crab Bisque

Ingredients

  • 1 pound Cornish crab meat
  • 2 tablespoons butter
  • 1 onion, chopped
  • 2 garlic cloves, minced

  • 4 cups fish stock
  • 1 cup heavy cream
  • 1/4 cup dry sherry
  • Salt and pepper to taste

Instructions

  4. Add the crab meat, heavy cream, and sherry to the pot. Simmer for an additional 10 minutes.
  5. Season the bisque with salt and pepper to taste.
  6. Using an immersion blender, puree the bisque until smooth.
  7. Serve the Cornish Crab Bisque hot, garnished with a sprinkle of fresh parsley.
