Cornish Cream Tea Cheesecake

Ingredients
- 200g digestive biscuits, crushed
- 100g unsalted butter, melted
- 500g cream cheese
- 150g caster sugar
- 2 eggs
- 1 tsp vanilla extract
- 150ml double cream
- 4 tbsp strawberry jam
- Fresh strawberries for garnish
Instructions
- Preheat the oven to 180°C. Mix the crushed biscuits with melted butter and press into the base of a 20cm springform tin. Chill in the fridge while preparing the filling.
- In a large bowl, beat the cream cheese and sugar until smooth. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and double cream.
- Pour the cream cheese mixture over the biscuit base. Drop spoonfuls of strawberry jam on top and use a skewer to create a marbled effect.
- Bake in the preheated oven for 45 minutes or until the cheesecake is set with a slight wobble in the middle. Allow to cool in the tin, then chill in the fridge for at least 4 hours or overnight.
- Before serving, decorate with fresh strawberries.
