Cornish Cream Tea Cheesecake

Ingredients

  • 200g digestive biscuits, crushed
  • 100g unsalted butter, melted
  • 500g cream cheese
  • 150g caster sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 150ml double cream
  • 4 tbsp strawberry jam
  • Fresh strawberries for garnish

Instructions

  1. Preheat the oven to 180°C. Mix the crushed biscuits with melted butter and press into the base of a 20cm springform tin. Chill in the fridge while preparing the filling.
  2. In a large bowl, beat the cream cheese and sugar until smooth. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and double cream.
  3. Pour the cream cheese mixture over the biscuit base. Drop spoonfuls of strawberry jam on top and use a skewer to create a marbled effect.
  4. Bake in the preheated oven for 45 minutes or until the cheesecake is set with a slight wobble in the middle. Allow to cool in the tin, then chill in the fridge for at least 4 hours or overnight.
  5. Before serving, decorate with fresh strawberries.
