Ingredients
- 250g ground almonds
- 200g sugar
- 4 eggs
- 1 lemon (zest and juice)
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- Powdered sugar, for dusting
Instructions
- Preheat the oven to 180°C (350°F). Grease and line a 9-inch cake pan with parchment paper.
- In a large bowl, beat the eggs and sugar together until pale and creamy.
- Add the ground almonds, lemon zest, lemon juice, vanilla extract, and baking powder to the egg mixture. Mix until well combined.
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
- Bake for 40 minutes, or until the cake is golden and a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Dust the top of the cake with powdered sugar before serving.
