Ingredients

  • 200g sugar
  • 4 eggs
  • 1 lemon (zest and juice)

Instructions

  1. Preheat the oven to 180°C (350°F). Grease and line a 9-inch cake pan with parchment paper.
  2. In a large bowl, beat the eggs and sugar together until pale and creamy.
  3. Add the ground almonds, lemon zest, lemon juice, vanilla extract, and baking powder to the egg mixture. Mix until well combined.
