Corsican Lemon and Herb Grilled Chicken (Poulet Grillé au Citron et aux Herbes Corse)

Ingredients

  • 4 chicken breasts
  • 2 lemons, juiced and zested
  • 2 cloves of garlic, minced
  • 2 tablespoons of Corsican herb blend (rosemary, thyme, oregano)
  • 3 tablespoons of olive oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix the lemon juice, lemon zest, minced garlic, Corsican herb blend, olive oil, salt, and pepper to create the marinade.
  2. Place the chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and massage the marinade into the chicken. Marinate in the refrigerator for at least 1 hour.
  3. Preheat the grill to medium-high heat.
  4. Remove the chicken from the marinade and discard the excess marinade.
  5. Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
  6. Once cooked, remove the chicken from the grill and let it rest for a few minutes before serving.
