Ingredients

  • 500g dried lentils
  • 200g smoked ham, diced
  • 2 onions, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 2 bay leaves
  • 1.5L chicken or vegetable broth
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Rinse the lentils under cold water and drain.
  2. In a large pot, heat the olive oil over medium heat. Add the onions, carrots, celery, and garlic. Cook until the vegetables are softened.
  3. Add the diced ham and cook for a few minutes.
  4. Add the lentils, bay leaves, and broth. Bring to a boil, then reduce the heat and simmer for 45-50 minutes, or until the lentils are tender.
  5. Season with salt and pepper to taste.
  6. Remove the bay leaves before serving.
