This Soupe de Lentilles Corse au Jambon Fumé is a traditional Corsican lentil soup with smoked ham that is hearty, flavorful, and perfect for a cozy meal on a chilly day.
Ingredients
- 500g dried lentils
- 200g smoked ham, diced
- 2 onions, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 2 bay leaves
- 1.5L chicken or vegetable broth
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Rinse the lentils under cold water and drain.
- In a large pot, heat the olive oil over medium heat. Add the onions, carrots, celery, and garlic. Cook until the vegetables are softened.
- Add the diced ham and cook for a few minutes.
- Add the lentils, bay leaves, and broth. Bring to a boil, then reduce the heat and simmer for 45-50 minutes, or until the lentils are tender.
- Season with salt and pepper to taste.
- Remove the bay leaves before serving.
