Ingredients
- 1 eggplant, cubed

- 2 1/4 cups vegetable broth

Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the eggplant, zucchinis, bell peppers, and red onion with olive oil, salt, and pepper. Spread the vegetables in a single layer on a baking sheet.
- Roast the vegetables in the preheated oven for 25-30 minutes, or until they are tender and slightly caramelized.
- While the vegetables are roasting, prepare the couscous. In a saucepan, bring the vegetable broth to a boil. Stir in the couscous, cover the pan, and remove it from the heat. Let it sit for 5 minutes, then fluff the couscous with a fork.
- Stir in the chopped parsley, mint, and lemon juice into the cooked couscous.
- Once the vegetables are done, serve them over the herbed couscous.
