Corsican Seafood Delight (Délice de la Mer Corse)

Ingredients

  • 500g mixed seafood (shrimp, squid, mussels)
  • 2 tomatoes, diced
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 1/4 cup olive oil
  • 1/2 cup white wine
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pan over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Add the mixed seafood to the pan and cook for 3-4 minutes, stirring occasionally.
  4. Pour in the white wine and diced tomatoes, then season with salt and pepper. Simmer for 15 minutes.
  5. Sprinkle the chopped parsley over the seafood and cook for an additional 2-3 minutes.
  6. Remove from heat and serve hot.
