Ingredients
- 1 pound fresh spinach, washed and chopped
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1/4 teaspoon nutmeg

- 12 cannelloni tubes
- 2 cups marinara sauce
- 1/2 cup shredded mozzarella cheese
Instructions
- In a large bowl, mix the chopped spinach, ricotta, Parmesan, nutmeg, salt, and pepper.
- Stuff the cannelloni tubes with the spinach and ricotta mixture.
- Spread a thin layer of marinara sauce on the bottom of a baking dish.
- Arrange the stuffed cannelloni in the dish and cover with the remaining marinara sauce.
- Sprinkle the mozzarella cheese on top.
- Cover the dish with foil and bake for 30 minutes. Then remove the foil and bake for an additional 10 minutes until the cheese is golden and bubbly.
