Ingredients

  • 1 pound fresh spinach, washed and chopped
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese

  • Salt and pepper to taste
  • 12 cannelloni tubes
  • 2 cups marinara sauce
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. In a large bowl, mix the chopped spinach, ricotta, Parmesan, nutmeg, salt, and pepper.
  2. Stuff the cannelloni tubes with the spinach and ricotta mixture.
  3. Spread a thin layer of marinara sauce on the bottom of a baking dish.
  4. Arrange the stuffed cannelloni in the dish and cover with the remaining marinara sauce.
  5. Sprinkle the mozzarella cheese on top.
  6. Cover the dish with foil and bake for 30 minutes. Then remove the foil and bake for an additional 10 minutes until the cheese is golden and bubbly.
