Explosión de Ceviche, or Costa Rican Ceviche Explosion, is a refreshing and flavorful dish that is perfect for a hot summer day. This dish features fresh seafood marinated in citrus juices and mixed with vegetables and herbs, creating a burst of tropical flavors.
Ingredients
- 1 lb fresh white fish, such as sea bass or snapper, diced
- 1 cup fresh lime juice
- 1/2 cup fresh orange juice
- 1 red onion, thinly sliced
- 1 red bell pepper, diced
- 1/2 cup chopped cilantro
- 2 tomatoes, diced
- 1 jalapeño pepper, seeded and minced
- Salt and pepper to taste
- 1 avocado, diced
- Tortilla chips for serving
Instructions
- In a glass or stainless steel bowl, combine the diced fish, lime juice, and orange juice. Make sure the fish is fully submerged in the citrus juices. Cover and refrigerate for 15-20 minutes, or until the fish is opaque and "cooked" by the acidity of the juices.
- Once the fish is ready, add the sliced red onion, diced red bell pepper, chopped cilantro, diced tomatoes, and minced jalapeño to the bowl. Season with salt and pepper, and gently toss to combine.
- Gently fold in the diced avocado. Be careful not to mash the avocado.
- Divide the ceviche into serving dishes and serve with tortilla chips.
