Ingredients
- 3 lbs beef short ribs
- 2 tbsp olive oil
- 1 onion, chopped

- 2 bay leaves
- Salt and pepper to taste
Instructions
- Season the short ribs with salt and pepper.
- Heat the olive oil in a large Dutch oven over medium-high heat. Sear the short ribs until browned on all sides. Remove and set aside.
- Add the onion and garlic to the Dutch oven and sauté until softened.
- Stir in the carrots and celery, and cook for a few minutes.
- Pour in the Malbec wine and beef broth, and add the bay leaves. Bring to a simmer.
- Return the short ribs to the pot. Cover and simmer for 2-3 hours, or until the meat is tender.
- Remove the short ribs from the pot and skim off any excess fat from the sauce.
- Serve the short ribs with the sauce and vegetables, and enjoy!
