Ingredients

  • 2 racks of pork ribs
  • 2 cups mango puree
  • 1/2 cup ketchup
  • 1/4 cup brown sugar
  • 1/4 cup apple cider vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. Season the ribs with salt, pepper, and smoked paprika.
  3. Place the ribs on a baking sheet and bake for 1.5 hours.
  4. In a saucepan, combine the mango puree, ketchup, brown sugar, apple cider vinegar, and minced garlic. Simmer for 10 minutes, stirring occasionally.
  5. Brush the mango sauce onto the ribs and return to the oven for another 30 minutes, basting occasionally.
  6. Once the ribs are tender and caramelized, remove from the oven and let them rest for a few minutes before serving.
