Cottage Cheese Fritters (chhena Kheeri Jhili Puli)

Ingredients

  • 2 cups cottage cheese (chhena)
  • 1 cup sugar
  • 4 cups water
  • 1 teaspoon cardamom powder
  • 1 tablespoon ghee (clarified butter)
  • 1 cup all-purpose flour
  • Oil for deep frying

Instructions

  1. In a deep pan, combine the sugar and water and bring it to a boil to make the sugar syrup. Add cardamom powder and let it simmer for 10 minutes.
  2. Meanwhile, knead the cottage cheese into a smooth dough and make small balls out of it. Flatten the balls slightly to form small discs.
  3. Heat the ghee in a separate pan. Coat the cottage cheese discs with all-purpose flour and deep fry them until golden brown.
  4. Remove the fried fritters from the oil and soak them in the prepared sugar syrup for at least 2 hours.
  5. Serve the cottage cheese fritters (Chhena Kheeri Jhili Puli) warm or chilled.
