Cottage Cheese Fritters (chhena Kheeri Jhili Puli)
Cottage Cheese Fritters, known as Chhena Kheeri Jhili Puli, are a popular sweet dish from the state of Odisha in India. These fritters are made with cottage cheese and are soaked in a cardamom-infused sugar syrup, making them a delightful treat for any occasion.
Ingredients
- 2 cups cottage cheese (chhena)
- 1 cup sugar
- 4 cups water
- 1 teaspoon cardamom powder
- 1 tablespoon ghee (clarified butter)
- 1 cup all-purpose flour
- Oil for deep frying
Instructions
- In a deep pan, combine the sugar and water and bring it to a boil to make the sugar syrup. Add cardamom powder and let it simmer for 10 minutes.
- Meanwhile, knead the cottage cheese into a smooth dough and make small balls out of it. Flatten the balls slightly to form small discs.
- Heat the ghee in a separate pan. Coat the cottage cheese discs with all-purpose flour and deep fry them until golden brown.
- Remove the fried fritters from the oil and soak them in the prepared sugar syrup for at least 2 hours.
- Serve the cottage cheese fritters (Chhena Kheeri Jhili Puli) warm or chilled.
