Cottage Cheese Pancakes (chhena Gaja Jhola Puli Pitha)

Ingredients

  • 1 cup cottage cheese
  • 1/2 cup semolina
  • 1/4 cup sugar
  • 1/4 teaspoon cardamom powder
  • 1/4 cup ghee (clarified butter)
  • 1/4 cup jaggery (or brown sugar)
  • 2 cups water

Instructions

  1. In a mixing bowl, combine cottage cheese, semolina, sugar, and cardamom powder. Mix well to form a smooth dough.
  2. Divide the dough into small portions and shape them into flat round pancakes.
  3. Heat ghee in a pan and fry the pancakes until golden brown on both sides. Remove from the pan and set aside.
  4. In a separate pan, combine jaggery and water. Bring to a boil to make a syrup.
  5. Add the fried pancakes to the syrup and let them simmer for a few minutes until the pancakes absorb the syrup.
  6. Remove from heat and let the pancakes cool slightly before serving.
