Cottage Cheese Pancakes (chhena Kheeri Pitha)

Ingredients

  • 2 cups fresh cottage cheese (chhena)
  • 1 cup semolina (sooji)
  • 1 cup sugar
  • 1/2 teaspoon cardamom powder
  • 1/4 cup ghee (clarified butter)
  • 1/4 cup milk
  • 1/4 cup chopped nuts (almonds, cashews, pistachios)
  • Oil for frying

Instructions

  1. In a mixing bowl, combine the fresh cottage cheese, semolina, sugar, cardamom powder, and milk. Mix well to form a smooth batter.
  2. Heat ghee in a pan and add the chopped nuts. Sauté until the nuts are golden brown. Remove from the heat and set aside.
  3. Heat a non-stick pan and lightly grease it with oil. Pour a ladleful of the batter onto the pan and spread it into a round shape to form a pancake.
  4. Cook the pancake on medium heat until the bottom is golden brown, then flip and cook the other side until golden brown as well.
  5. Repeat the process with the remaining batter to make more pancakes.
  6. Sprinkle the sautéed nuts on top of the pancakes and serve hot.
