Cottage Cheese Pancakes (chhena Kheeri Pitha)
Cottage Cheese Pancakes, also known as Chhena Kheeri Pitha, are a traditional delicacy from Oriya Cuisine. These pancakes are made with fresh cottage cheese and are a popular sweet treat during festivals and special occasions.
Ingredients
- 2 cups fresh cottage cheese (chhena)
- 1 cup semolina (sooji)
- 1 cup sugar
- 1/2 teaspoon cardamom powder
- 1/4 cup ghee (clarified butter)
- 1/4 cup milk
- 1/4 cup chopped nuts (almonds, cashews, pistachios)
- Oil for frying
Instructions
- In a mixing bowl, combine the fresh cottage cheese, semolina, sugar, cardamom powder, and milk. Mix well to form a smooth batter.
- Heat ghee in a pan and add the chopped nuts. Sauté until the nuts are golden brown. Remove from the heat and set aside.
- Heat a non-stick pan and lightly grease it with oil. Pour a ladleful of the batter onto the pan and spread it into a round shape to form a pancake.
- Cook the pancake on medium heat until the bottom is golden brown, then flip and cook the other side until golden brown as well.
- Repeat the process with the remaining batter to make more pancakes.
- Sprinkle the sautéed nuts on top of the pancakes and serve hot.
