Cottage Cheese Pancakes (chhena Poda Jhola Pitha)

Ingredients

  • 2 cups fresh cottage cheese (chhena)
  • 1 cup semolina (sooji)
  • 1 cup sugar
  • 1/2 cup grated coconut
  • 1/2 teaspoon cardamom powder
  • 1/4 cup ghee (clarified butter)
  • 1/2 cup milk
  • 1/4 teaspoon baking soda
  • Pinch of salt

Instructions

  1. In a mixing bowl, combine the fresh cottage cheese, semolina, sugar, grated coconut, cardamom powder, and a pinch of salt.
  2. Add milk and mix well to form a thick batter. Let it rest for 10 minutes.
  3. After 10 minutes, add baking soda to the batter and mix gently.
  4. Heat a non-stick pan on medium heat and brush it with ghee.
  5. Pour a ladleful of the batter onto the pan and spread it into a round shape.
  6. Cook the pancake on low heat until the bottom is golden brown, then flip and cook the other side.
  7. Repeat the process with the remaining batter, adding ghee as needed.
  8. Once all the pancakes are cooked, serve them hot with a drizzle of ghee on top.
