Ingredients
- 2 cups fresh cottage cheese (chhena)
- 1 cup semolina (sooji)
- 1 cup sugar
- 1/2 cup grated coconut
- 1/2 teaspoon cardamom powder
- 1/4 cup ghee (clarified butter)
- 1/2 cup milk
- 1/4 teaspoon baking soda
- Pinch of salt
Instructions
- In a mixing bowl, combine the fresh cottage cheese, semolina, sugar, grated coconut, cardamom powder, and a pinch of salt.
- Add milk and mix well to form a thick batter. Let it rest for 10 minutes.
- After 10 minutes, add baking soda to the batter and mix gently.
- Heat a non-stick pan on medium heat and brush it with ghee.
- Pour a ladleful of the batter onto the pan and spread it into a round shape.
- Cook the pancake on low heat until the bottom is golden brown, then flip and cook the other side.
- Repeat the process with the remaining batter, adding ghee as needed.
- Once all the pancakes are cooked, serve them hot with a drizzle of ghee on top.
