Cottage Cheese Pudding (chhanar Kheer)
Cottage Cheese Pudding, also known as Chhanar Kheer, is a traditional Bengali dessert that is creamy, rich, and full of aromatic flavors. This sweet dish is made with fresh cottage cheese, milk, and sugar, and is often garnished with nuts and saffron.
Ingredients
- 1 liter whole milk
- 1 cup fresh cottage cheese (chhena)
- 1/2 cup sugar
- 1/4 teaspoon cardamom powder
- 2 tablespoons chopped nuts (almonds, pistachios, cashews)
- A pinch of saffron strands
Instructions
- Boil the milk in a heavy-bottomed pan over medium heat, stirring occasionally to prevent it from sticking to the bottom.
- Once the milk comes to a boil, reduce the heat and simmer for 10-15 minutes, stirring frequently, until it thickens slightly.
- Add the fresh cottage cheese (chhena) and sugar to the thickened milk, and cook for another 10 minutes, stirring continuously.
- Stir in the cardamom powder and saffron strands, and cook for an additional 5 minutes.
- Remove the pan from the heat and let the pudding cool to room temperature.
- Refrigerate the Chhanar Kheer for at least 2 hours before serving.
- Garnish with chopped nuts before serving.
