Cottage Cheese Pudding (chhanar Payesh Bliss)

Ingredients

  • 1 liter whole milk
  • 200g cottage cheese (chhana)
  • 1/2 cup sugar
  • 1/4 teaspoon cardamom powder
  • 2 tablespoons chopped nuts (almonds, pistachios, cashews)
  • 1 teaspoon rose water (optional)

Instructions

  1. In a heavy-bottomed pan, bring the milk to a boil over medium heat.
  2. Once the milk comes to a boil, reduce the heat and let it simmer for 10-15 minutes, stirring occasionally, until it reduces to about half its original quantity.
  3. Crumble the cottage cheese and add it to the simmering milk.
  4. Add sugar and cardamom powder, and continue to cook for another 5-7 minutes, stirring gently.
  5. Remove from heat and let the pudding cool to room temperature.
  6. Stir in the chopped nuts and rose water, if using.
  7. Refrigerate the pudding for at least 2 hours before serving.
