Cottage Cheese Pudding (chhanar Payesh Bliss)
Cottage Cheese Pudding, known as Chhanar Payesh in Bengali cuisine, is a delightful dessert made with cottage cheese, milk, and sugar. This creamy and aromatic pudding is a popular sweet dish in Bengal and is often served during special occasions and festivals.
Ingredients
- 1 liter whole milk
- 200g cottage cheese (chhana)
- 1/2 cup sugar
- 1/4 teaspoon cardamom powder
- 2 tablespoons chopped nuts (almonds, pistachios, cashews)
- 1 teaspoon rose water (optional)
Instructions
- In a heavy-bottomed pan, bring the milk to a boil over medium heat.
- Once the milk comes to a boil, reduce the heat and let it simmer for 10-15 minutes, stirring occasionally, until it reduces to about half its original quantity.
- Crumble the cottage cheese and add it to the simmering milk.
- Add sugar and cardamom powder, and continue to cook for another 5-7 minutes, stirring gently.
- Remove from heat and let the pudding cool to room temperature.
- Stir in the chopped nuts and rose water, if using.
- Refrigerate the pudding for at least 2 hours before serving.
