Cottage Cheese Pudding, also known as Chhena Kheeri, is a traditional dessert from Oriya Cuisine that is creamy, rich, and absolutely delicious. It is made with cottage cheese, milk, sugar, and flavored with cardamom and saffron.
Ingredients
- 2 cups cottage cheese (chhena)
- 4 cups milk
- 1 cup sugar
- 1/2 teaspoon cardamom powder
- A pinch of saffron strands
Instructions
- In a heavy-bottomed pan, heat the milk over medium heat.
- Once the milk comes to a boil, reduce the heat and add the cottage cheese, stirring continuously.
- Add the sugar, cardamom powder, and saffron strands, and continue to cook until the mixture thickens.
- Remove from heat and let it cool to room temperature.
- Refrigerate for a few hours before serving.
