Cottage Cheese Pudding, also known as Chhena Kheeri, is a traditional dessert from Oriya Cuisine that is creamy, rich, and absolutely delicious. It is made with cottage cheese, milk, sugar, and flavored with cardamom and saffron.

Cottage Cheese Pudding (chhena Kheeri)

Ingredients

  • 2 cups cottage cheese (chhena)
  • 4 cups milk
  • 1 cup sugar
  • 1/2 teaspoon cardamom powder
  • A pinch of saffron strands

Instructions

  1. In a heavy-bottomed pan, heat the milk over medium heat.
  2. Once the milk comes to a boil, reduce the heat and add the cottage cheese, stirring continuously.
  3. Add the sugar, cardamom powder, and saffron strands, and continue to cook until the mixture thickens.
  4. Remove from heat and let it cool to room temperature.
  5. Refrigerate for a few hours before serving.
