Ingredients
- 500g ground Dorset lamb
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
- 1/2 cup Greek yogurt
- 2 tbsp fresh mint, finely chopped
- 1 tbsp lemon juice
- Salt to taste
Instructions
- In a large bowl, mix the ground lamb, onion, garlic, cumin, coriander, paprika, cayenne pepper, parsley, salt, and pepper until well combined.
- Divide the mixture and shape into kofta (sausage) shapes around metal skewers.
- Heat a non-stick pan over medium heat and cook the kofta for 12-15 minutes, turning occasionally until browned and cooked through.
- While the kofta is cooking, prepare the mint yogurt dip by mixing the Greek yogurt, fresh mint, lemon juice, and salt in a bowl. Refrigerate until ready to serve.
