Ingredients

  • 500g ground Dorset lamb
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • 1/2 cup Greek yogurt
  • 2 tbsp fresh mint, finely chopped
  • 1 tbsp lemon juice
  • Salt to taste

Instructions

  1. In a large bowl, mix the ground lamb, onion, garlic, cumin, coriander, paprika, cayenne pepper, parsley, salt, and pepper until well combined.
  2. Divide the mixture and shape into kofta (sausage) shapes around metal skewers.
  3. Heat a non-stick pan over medium heat and cook the kofta for 12-15 minutes, turning occasionally until browned and cooked through.
  4. While the kofta is cooking, prepare the mint yogurt dip by mixing the Greek yogurt, fresh mint, lemon juice, and salt in a bowl. Refrigerate until ready to serve.
