Ingredients

  • 4 medium zucchinis
  • 1 pound ground meat (beef or lamb)
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 1/2 cup cooked rice
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1/4 cup grated cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the seeds to create "boats".
  3. In a skillet, brown the ground meat with the chopped onion.
  4. Add the diced tomatoes, cooked rice, paprika, cumin, salt, and pepper to the skillet. Cook for 5 minutes.
  5. Fill the zucchini boats with the meat mixture and place them in a baking dish.
  6. If desired, sprinkle grated cheese on top of the stuffed zucchinis.
  7. Bake in the preheated oven for 30-35 minutes, or until the zucchinis are tender and the filling is cooked through.
