Ingredients
- 4 medium zucchinis
- 1 pound ground meat (beef or lamb)
- 1 onion, finely chopped
- 2 tomatoes, diced
- 1/2 cup cooked rice
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt and pepper to taste
- 1/4 cup grated cheese (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the zucchinis in half lengthwise and scoop out the seeds to create "boats".
- In a skillet, brown the ground meat with the chopped onion.
- Add the diced tomatoes, cooked rice, paprika, cumin, salt, and pepper to the skillet. Cook for 5 minutes.
- Fill the zucchini boats with the meat mixture and place them in a baking dish.
- If desired, sprinkle grated cheese on top of the stuffed zucchinis.
- Bake in the preheated oven for 30-35 minutes, or until the zucchinis are tender and the filling is cooked through.
- Serve hot and enjoy!
