Ingredients
- 1 1/2 cups couscous
- 2 cups vegetable broth
- 1/4 cup olive oil
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 orange bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup lemon juice
- Salt and pepper to taste
Instructions
- In a large bowl, pour the couscous and vegetable broth. Cover and let it sit for 5 minutes.
- Fluff the couscous with a fork to separate the grains.
- In a large skillet, heat the olive oil over medium heat. Add the diced bell peppers and cook for 3-4 minutes until slightly softened.
- Add the cherry tomatoes and cook for an additional 2 minutes.
- Transfer the cooked vegetables to the bowl of couscous. Add the chopped parsley, mint, and lemon juice. Season with salt and pepper, and toss to combine.
- Adjust seasoning if needed and serve the couscous carnival warm or at room temperature.
