Ingredients

  • 1 1/2 cups couscous
  • 2 cups vegetable broth
  • 1/4 cup olive oil
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 orange bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, pour the couscous and vegetable broth. Cover and let it sit for 5 minutes.
  2. Fluff the couscous with a fork to separate the grains.
  3. In a large skillet, heat the olive oil over medium heat. Add the diced bell peppers and cook for 3-4 minutes until slightly softened.
  4. Add the cherry tomatoes and cook for an additional 2 minutes.
  5. Transfer the cooked vegetables to the bowl of couscous. Add the chopped parsley, mint, and lemon juice. Season with salt and pepper, and toss to combine.
  6. Adjust seasoning if needed and serve the couscous carnival warm or at room temperature.
