Couscous Royale (Méchoui)

Ingredients

  • 1 whole lamb, cleaned and prepared
  • 2 cups couscous
  • 1 onion, chopped
  • 3 tomatoes, diced
  • 1 cup chickpeas, cooked
  • 1 cup raisins
  • 1 tablespoon ground cumin
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1 tablespoon ground paprika
  • 1/2 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the lamb for roasting by seasoning it with salt, pepper, cumin, ginger, cinnamon, and paprika. Let it marinate for at least 2 hours.
  2. Roast the lamb on a spit over a charcoal fire for 3 hours, turning it occasionally to ensure even cooking.
  3. While the lamb is roasting, prepare the couscous according to the package instructions.
  4. In a large pot, sauté the chopped onion and diced tomatoes in olive oil until softened.
  5. Add the cooked chickpeas and raisins to the pot, and season with salt and pepper.
  6. Fluff the cooked couscous with a fork and add it to the pot, mixing well with the other ingredients.
  7. Once the lamb is fully cooked, remove it from the spit and serve it alongside the couscous mixture.
