Ingredients
- 1 whole lamb, cleaned and prepared
- 2 cups couscous
- 1 onion, chopped
- 3 tomatoes, diced
- 1 cup chickpeas, cooked
- 1 cup raisins
- 1 tablespoon ground cumin
- 1 tablespoon ground ginger
- 1 tablespoon ground cinnamon
- 1 tablespoon ground paprika
- 1/2 cup olive oil
- Salt and pepper to taste
Instructions
- Prepare the lamb for roasting by seasoning it with salt, pepper, cumin, ginger, cinnamon, and paprika. Let it marinate for at least 2 hours.
- Roast the lamb on a spit over a charcoal fire for 3 hours, turning it occasionally to ensure even cooking.
- While the lamb is roasting, prepare the couscous according to the package instructions.
- In a large pot, sauté the chopped onion and diced tomatoes in olive oil until softened.
- Add the cooked chickpeas and raisins to the pot, and season with salt and pepper.
- Fluff the cooked couscous with a fork and add it to the pot, mixing well with the other ingredients.
- Once the lamb is fully cooked, remove it from the spit and serve it alongside the couscous mixture.
