Couscous Thieb (dakar's Delight)

Ingredients
- 2 cups couscous
- 1 onion, chopped
- 2 tomatoes, diced
- 1 carrot, sliced
- 1 eggplant, diced
- 1 cup cabbage, shredded
- 1 cup pumpkin, diced
- 1 cup cauliflower florets
- 1/2 cup green beans, trimmed
- 1/4 cup tomato paste
- 4 cups vegetable broth
- 1/4 cup vegetable oil
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and cook until translucent.
- Stir in the tomato paste, turmeric, and cumin, and cook for 2 minutes.
- Add the diced tomatoes and cook for another 5 minutes, stirring occasionally.
- Pour in the vegetable broth and bring to a boil.
- Add the couscous, carrot, eggplant, cabbage, pumpkin, cauliflower, and green beans to the pot. Season with salt and pepper.
- Reduce the heat to low, cover the pot, and simmer for 20 minutes, or until the vegetables are tender and the couscous is cooked.
- Fluff the couscous with a fork and serve hot.
