Couscous Thieb (dakar's Delight)

Ingredients

  • 2 cups couscous
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 1 carrot, sliced
  • 1 eggplant, diced
  • 1 cup cabbage, shredded
  • 1 cup pumpkin, diced
  • 1 cup cauliflower florets
  • 1/2 cup green beans, trimmed
  • 1/4 cup tomato paste
  • 4 cups vegetable broth
  • 1/4 cup vegetable oil
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and cook until translucent.
  2. Stir in the tomato paste, turmeric, and cumin, and cook for 2 minutes.
  3. Add the diced tomatoes and cook for another 5 minutes, stirring occasionally.
  4. Pour in the vegetable broth and bring to a boil.
  5. Add the couscous, carrot, eggplant, cabbage, pumpkin, cauliflower, and green beans to the pot. Season with salt and pepper.
  6. Reduce the heat to low, cover the pot, and simmer for 20 minutes, or until the vegetables are tender and the couscous is cooked.
  7. Fluff the couscous with a fork and serve hot.
