Ingredients

  • 4 large potatoes, diced
  • 1 onion, chopped
  • 1 bell pepper, diced
  • 4 slices of bacon, chopped
  • 2 cloves of garlic, minced
  • 1 tsp paprika
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon from the skillet and set aside, leaving the bacon fat in the skillet.
  2. Add the olive oil to the skillet and increase the heat to medium-high. Add the diced potatoes and cook until they start to brown, stirring occasionally.
  3. Add the chopped onion, bell pepper, and minced garlic to the skillet. Cook until the vegetables are tender.
  4. Sprinkle the paprika, cumin, salt, and pepper over the potato mixture. Stir to combine and cook for an additional 2-3 minutes.
  5. Return the cooked bacon to the skillet and stir to combine with the potato mixture.
  6. Remove from heat and serve hot.
