Ingredients
- 4 large potatoes, diced
- 1 onion, chopped
- 1 bell pepper, diced
- 4 slices of bacon, chopped
- 2 cloves of garlic, minced
- 1 tsp paprika
- 1/2 tsp cumin
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon from the skillet and set aside, leaving the bacon fat in the skillet.
- Add the olive oil to the skillet and increase the heat to medium-high. Add the diced potatoes and cook until they start to brown, stirring occasionally.
- Add the chopped onion, bell pepper, and minced garlic to the skillet. Cook until the vegetables are tender.
- Sprinkle the paprika, cumin, salt, and pepper over the potato mixture. Stir to combine and cook for an additional 2-3 minutes.
- Return the cooked bacon to the skillet and stir to combine with the potato mixture.
- Remove from heat and serve hot.
