Crab And Pumpkin Curry

Ingredients
- 1 lb fresh crab meat
- 2 cups diced pumpkin
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 red chili, finely chopped
- 1 tsp ground turmeric
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 can (14 oz) coconut milk
- 2 tbsp vegetable oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, garlic, and red chili. Sauté until the onion is soft and translucent.
- Add the ground turmeric, cumin, and coriander to the pot. Stir well to coat the onions and spices.
- Add the diced pumpkin to the pot and cook for 5 minutes, stirring occasionally.
- Pour in the coconut milk and bring the mixture to a gentle simmer. Cook for 15 minutes until the pumpkin is tender.
- Gently fold in the crab meat and cook for an additional 5-7 minutes, until the crab is heated through.
- Season the curry with salt to taste.
- Garnish with fresh cilantro and serve hot with steamed rice.
