Crab And Pumpkin Curry

Ingredients

  • 1 lb fresh crab meat
  • 2 cups diced pumpkin
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 red chili, finely chopped
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 can (14 oz) coconut milk
  • 2 tbsp vegetable oil
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, garlic, and red chili. Sauté until the onion is soft and translucent.
  2. Add the ground turmeric, cumin, and coriander to the pot. Stir well to coat the onions and spices.
  3. Add the diced pumpkin to the pot and cook for 5 minutes, stirring occasionally.
  4. Pour in the coconut milk and bring the mixture to a gentle simmer. Cook for 15 minutes until the pumpkin is tender.
  5. Gently fold in the crab meat and cook for an additional 5-7 minutes, until the crab is heated through.
  6. Season the curry with salt to taste.
  7. Garnish with fresh cilantro and serve hot with steamed rice.
