Ingredients

  • 2 cups cracked wheat
  • 1 lb chicken, cut into pieces
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cardamom
  • 6 cups chicken broth
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened.
  2. Add the chicken pieces to the pot and cook until browned on all sides.
  3. Stir in the cracked wheat, ground cumin, ground coriander, ground cinnamon, and ground cardamom. Cook for a few minutes to toast the spices.
  4. Pour in the chicken broth and season with salt and pepper. Bring the mixture to a boil, then reduce the heat to low and simmer for about 45-50 minutes, stirring occasionally, until the wheat is tender and the chicken is cooked through.
