Cracked Wheat Porridge with Chicken, also known as Jareesh, is a traditional dish from Saudi Arabian cuisine. This hearty and comforting porridge is made with cracked wheat, tender chicken, and a blend of aromatic spices, creating a delicious and satisfying meal.
Ingredients
- 2 cups cracked wheat
- 1 lb chicken, cut into pieces
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cardamom
- 6 cups chicken broth
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- In a large pot, heat some oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened.
- Add the chicken pieces to the pot and cook until browned on all sides.
- Stir in the cracked wheat, ground cumin, ground coriander, ground cinnamon, and ground cardamom. Cook for a few minutes to toast the spices.
- Pour in the chicken broth and season with salt and pepper. Bring the mixture to a boil, then reduce the heat to low and simmer for about 45-50 minutes, stirring occasionally, until the wheat is tender and the chicken is cooked through.
- Once the porridge is ready, adjust the seasoning if needed and serve hot, garnished with chopped fresh parsley.
