Cranberry Caribou Stir-fry
This Cranberry Caribou Stir-Fry is a traditional Yup'ik dish that combines the rich flavors of caribou meat with the tartness of cranberries. It's a hearty and nutritious meal that is perfect for a cozy family dinner.
Ingredients
- 1 lb caribou meat, thinly sliced
- 1 cup fresh cranberries
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 bell pepper, sliced
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tsp ginger, grated
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat.
- Add the sliced caribou meat and cook for 3-4 minutes until browned. Remove the meat from the skillet and set aside.
- Heat the remaining tablespoon of vegetable oil in the same skillet. Add the onion, garlic, and bell pepper. Cook for 2-3 minutes until the vegetables are tender.
- Add the cranberries, soy sauce, honey, and ginger to the skillet. Cook for another 2-3 minutes, stirring occasionally.
- Return the cooked caribou meat to the skillet and toss to combine with the cranberry mixture. Cook for an additional 2-3 minutes to heat through.
- Season with salt and pepper to taste.
- Remove from heat and serve the Cranberry Caribou Stir-Fry hot.
