Cranberry Caribou Stir-fry

Ingredients

  • 1 lb caribou meat, thinly sliced
  • 1 cup fresh cranberries
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 bell pepper, sliced
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp ginger, grated
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat.
  2. Add the sliced caribou meat and cook for 3-4 minutes until browned. Remove the meat from the skillet and set aside.
  3. Heat the remaining tablespoon of vegetable oil in the same skillet. Add the onion, garlic, and bell pepper. Cook for 2-3 minutes until the vegetables are tender.
  4. Add the cranberries, soy sauce, honey, and ginger to the skillet. Cook for another 2-3 minutes, stirring occasionally.
  5. Return the cooked caribou meat to the skillet and toss to combine with the cranberry mixture. Cook for an additional 2-3 minutes to heat through.
  6. Season with salt and pepper to taste.
  7. Remove from heat and serve the Cranberry Caribou Stir-Fry hot.
