Cranberry Moose Roast

Ingredients

  • 3 lbs moose roast
  • 1 cup cranberries
  • 1 onion, sliced
  • 3 garlic cloves, minced
  • 2 cups beef broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 325°F.
  2. Season the moose roast with salt and pepper.
  3. Heat olive oil in a large Dutch oven over medium-high heat.
  4. Sear the moose roast on all sides until browned, about 5 minutes per side.
  5. Remove the moose roast from the Dutch oven and set aside.
  6. Add the sliced onion and minced garlic to the Dutch oven and sauté until softened.
  7. Return the moose roast to the Dutch oven and add the cranberries and beef broth.
  8. Cover the Dutch oven and place it in the preheated oven.
  9. Cook for 2.5 to 3 hours, or until the moose roast is tender.
  10. Remove the roast from the oven and let it rest for 10 minutes before slicing.
  11. Serve the cranberry moose roast with the cranberry sauce from the Dutch oven.
