Cranberry Moose Roast

Ingredients
- 3 lbs moose roast
- 1 cup cranberries
- 1 onion, sliced
- 3 garlic cloves, minced
- 2 cups beef broth
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 325°F.
- Season the moose roast with salt and pepper.
- Heat olive oil in a large Dutch oven over medium-high heat.
- Sear the moose roast on all sides until browned, about 5 minutes per side.
- Remove the moose roast from the Dutch oven and set aside.
- Add the sliced onion and minced garlic to the Dutch oven and sauté until softened.
- Return the moose roast to the Dutch oven and add the cranberries and beef broth.
- Cover the Dutch oven and place it in the preheated oven.
- Cook for 2.5 to 3 hours, or until the moose roast is tender.
- Remove the roast from the oven and let it rest for 10 minutes before slicing.
- Serve the cranberry moose roast with the cranberry sauce from the Dutch oven.
